Alice Springs Chicken (Outback Copycat)

A copycat of the Outback Steakhouse favorite! Juicy chicken breasts smothered in a homemade honey mustard sauce, topped with crispy bacon, melty Monterey Jack cheese, and optional mushrooms. An indulgent dinner classic made right at home.

Ingredients
  

  • 4 chicken breasts, sliced horizontally in half
  • 6 slices cooked bacon
  • 2 cups Monterey Jack cheese
  • 1/3 cup mayonnaise
  • 1 tbsp honey
  • 2 tsp stone-ground mustard
  • salt, pepper, and paprika (for seasoning)
  • 1 cup sautéed white button mushrooms (optional)

Method
 

  1. Season both sides of chicken breasts with salt, pepper, and paprika. Brown in a few tablespoons of oil in a skillet, then transfer to a 9x13 baking dish.
  2. In a small bowl, whisk together mayonnaise, honey, and stone-ground mustard to make the honey mustard sauce.
  3. Spread honey mustard sauce over chicken breasts. Top with cheese, bacon, and optional mushrooms.
  4. Bake at 350°F (175°C) for 25–30 minutes, until chicken is cooked through and cheese is melted.
  5. Serve with additional honey mustard sauce if desired.

Notes

Mushrooms can be sautéed in 1 tbsp of oil or use canned if preferred. For extra tender chicken, marinate breasts in a quick tenderizer mix of baking soda, vinegar, salt, and water for 20 minutes before cooking. Serve with extra honey mustard sauce for dipping.
