- Season both sides of chicken breasts with salt, pepper, and paprika. Brown in a few tablespoons of oil in a skillet, then transfer to a 9x13 baking dish.
- In a small bowl, whisk together mayonnaise, honey, and stone-ground mustard to make the honey mustard sauce.
- Spread honey mustard sauce over chicken breasts. Top with cheese, bacon, and optional mushrooms.
- Bake at 350°F (175°C) for 25–30 minutes, until chicken is cooked through and cheese is melted.
- Serve with additional honey mustard sauce if desired.
Notes
Mushrooms can be sautéed in 1 tbsp of oil or use canned if preferred. For extra tender chicken, marinate breasts in a quick tenderizer mix of baking soda, vinegar, salt, and water for 20 minutes before cooking. Serve with extra honey mustard sauce for dipping.
