  • 2–3 tbsp honey (or maple syrup)
  • 2–3 sprigs fresh thyme

  • for serving fresh fruit (grapes, apple slices, or pears)
  • optional toasted nuts (pecans, walnuts, or almonds)

Method
 

  1. Preheat your oven to 350°F (180°C). Place the wheel of brie in a small oven-safe dish or on parchment paper on a baking sheet to catch any melted cheese.
  2. Bake for 15–20 minutes for an 8 oz brie (20–25 minutes for 16 oz). The cheese should feel soft and almost collapse when gently pressed in the center. Do not overbake or it may firm up again.
  3. Remove from the oven and immediately drizzle honey over the top. Garnish with fresh thyme sprigs and a sprinkle of flaky sea salt if desired.
  4. Transfer to a serving platter or board. Serve warm with crostini, crackers, and fresh fruit. Enjoy immediately while the cheese is gooey and melty.
