- Preheat your oven to 350°F (180°C). Place the wheel of brie in a small oven-safe dish or on parchment paper on a baking sheet to catch any melted cheese.
- Bake for 15–20 minutes for an 8 oz brie (20–25 minutes for 16 oz). The cheese should feel soft and almost collapse when gently pressed in the center. Do not overbake or it may firm up again.
- Remove from the oven and immediately drizzle honey over the top. Garnish with fresh thyme sprigs and a sprinkle of flaky sea salt if desired.
- Transfer to a serving platter or board. Serve warm with crostini, crackers, and fresh fruit. Enjoy immediately while the cheese is gooey and melty.
