Method
- Preheat oven to 400°F (200°C).
- Place feta in center of an 8x8 inch baking dish. Drizzle both the feta and the dish with olive oil.
- Crack eggs into the baking dish, arranging them around the feta. Season with salt and pepper.
- Bake for 20–22 minutes or until eggs have just set, depending on desired doneness.
- Remove from oven and stir warm feta with the eggs. Serve immediately.
Notes
For softer eggs, reduce the baking time slightly. Delicious served over sourdough toast, stuffed in breakfast wraps, or plated next to crispy bacon or sausage. Add fresh herbs or chili flakes if desired.
