Baked Feta Potatoes

These baked feta potatoes are inspired by the viral baked feta pasta trend! Crispy roasted potatoes tossed with melty feta, roasted garlic, lemon, and honey for a side dish that’s both rich and fresh.

Ingredients
  

  • 2 large baking potatoes, cubed
  • 200 g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head garlic, top cut off
  • 1 whole lemon, halved
  • 1 tbsp honey
  • 0.25 cup fresh basil, chopped (20g)

Equipment

  • Saucepan for par-boiling potatoes
  • Baking dish for roasting potatoes and feta
  • Foil to wrap garlic
  • Knife for cubing potatoes and cutting garlic

Method
 

  1. Preheat oven to 200C (390F). Wash and cube potatoes, then par-boil for 6-8 minutes. Drain and steam dry for 2-3 minutes.
  2. Add potatoes to baking dish with olive oil, thyme, oregano, salt, and pepper. Toss to coat evenly.
  3. Drizzle garlic head with olive oil, wrap in foil, and add to baking dish. Roast potatoes and garlic for 30-40 minutes until golden and crispy.
  4. Remove garlic and add feta to the tray, squeezing over half a lemon. Roast another 15 minutes.
  5. Once garlic is cool, squeeze and mash. Mix into potatoes with juice from remaining lemon half and basil.
  6. Drizzle honey over potatoes, sprinkle with chili flakes and extra basil, then serve.

Notes

Updated in May 2025: Par-boiling the potatoes before roasting ensures extra crispiness, while baking the feta separately prevents it from becoming rubbery. Use as much roasted garlic as you like for a stronger flavor, or substitute with minced garlic for a shortcut.
