Bang Bang Chicken Bowl

This Bang Bang Chicken Bowl features crispy chicken tossed in a spicy, creamy Bang Bang sauce, served over warm rice with crunchy cabbage, cucumber, and carrots. Topped with avocado, cilantro, and sesame seeds for freshness and texture.

Ingredients
  

  • 1 1/4 cups mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 2 tbsp honey
  • 2 tsp Sriracha, or more to taste
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 cups cooked white rice, warmed
  • 2 cups red cabbage, thinly sliced
  • 1 large carrot, julienned
  • 1 medium cucumber, halved and sliced
  • 1 large avocado, thinly sliced
  • fresh cilantro, chopped for garnish
  • sesame seeds, for garnish

Method
 

  1. In a medium bowl, stir together mayonnaise, Thai sweet chili sauce, honey, and Sriracha until smooth. Set aside.
  2. In a large bowl, combine vegetable oil, paprika, garlic powder, salt, and black pepper. Add chicken cubes and toss to coat evenly.
  3. Place chicken in a single layer in the air fryer basket. Air fry at 400°F for 11–12 minutes, flipping halfway, until cooked through (165°F).
  4. Transfer cooked chicken to a large bowl. Add 1/2 cup of the Bang Bang sauce and toss to coat.
  5. To assemble: In each of 4 bowls, add 1 cup rice, 1/2 cup cabbage, 1/4 cup carrots, and 1/4 cup cucumbers. Top with avocado slices and Bang Bang chicken.
  6. Drizzle with extra sauce and garnish with cilantro and sesame seeds. Serve immediately.

Notes

Stovetop Option: Don’t have an air fryer? Use a non-stick skillet. Cook chicken 8–10 minutes until golden and cooked through. Toss with Bang Bang sauce right in the pan. You can adjust the Sriracha to make it milder or hotter. Great for meal prep!
