Ingredients
  

  • 14.5 oz diced tomatoes, undrained
  • 0.33 cup coarsely chopped red onion (about ¼ small)
  • 0.25 cup cilantro
  • 1 lime, zested and juiced
  • 1 jalapeño pepper or serrano, seeded and chopped
  • 2 cloves garlic, coarsely chopped
  • 0.25 tsp ground cumin
  • to taste sea salt
  • to taste black pepper

  • 7-cup food processor or immersion blender
  • airtight storage container

Method
 

  1. Place tomatoes, onions, cilantro, lime, jalapeño, garlic, cumin, salt, and pepper into a food processor or blender.
  2. If using a stick blender, place ingredients in a tall-sided container to avoid splattering.
  3. Blend or pulse until combined and desired texture is reached. Do not overblend.
  4. Serve immediately or refrigerate in an airtight container for up to 5 days.

Notes

Use reduced sodium canned tomatoes for better salt control. If using fresh tomatoes, squeeze out excess juice and seeds. Adjust heat by varying the amount of jalapeño or serrano. Serve with guacamole, chips, or over Mexican entrées.
