Ingredients
  

  • 1 cup creamy peanut butter
  • 2 tablespoons butter, softened
  • 1/2 cup powdered sugar (plus more if needed)
  • 3/4 cup brown sugar
  • mini pretzels or pretzel snaps
  • 4 squares chocolate almond bark (or 16 oz melting wafers)

Method
 

  1. Line a baking sheet with parchment or wax paper and set aside.
  2. In a large bowl, beat together peanut butter and softened butter until smooth. Add powdered sugar and brown sugar, mixing until fully combined. The mixture should be firm enough to roll into balls without sticking. If too soft, add more powdered sugar one tablespoon at a time.
  3. Roll the peanut butter mixture into 3/4-inch balls. Sandwich each ball between two pretzels and press gently to secure. Place on the prepared baking sheet.
  4. Transfer the baking sheet to the freezer for 30 minutes to firm up the filling and make dipping easier.
  5. Melt chocolate almond bark in a double boiler over low heat, stirring until smooth. Alternatively, melt in the microwave using 30-second intervals at 50% power, stirring between each.
  6. Remove pretzel sandwiches from the freezer. Dip each halfway into melted chocolate, letting excess drip off. Place back on the baking sheet.
  7. Allow dipped pretzels to sit at room temperature or refrigerate for 10–15 minutes until chocolate is fully set. Store in an airtight container.
