Ingredients
  

  • 16 oz cream cheese, full-fat, softened to room temperature
  • cups sharp white cheddar cheese, freshly shredded
  • 2 tablespoons fresh chives, chopped and divided
  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon brown sugar (light or dark)
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • ¾ cup dried cranberries, finely chopped and divided
  • ¾ cup pecans, finely chopped and divided

Method
 

  1. In a stand mixer fitted with the paddle attachment, beat softened cream cheese on medium-high speed for about 2 minutes until smooth and creamy.
  2. Add shredded cheddar, 1 tablespoon chives, parsley, brown sugar, garlic powder, salt, pepper, half the cranberries, and half the pecans. Beat until well combined.
  3. Scrape down the bowl and form the mixture into a ball using a spatula or your hands. It should be slightly sticky but easy to shape.
  4. In a small bowl, combine the remaining chives, cranberries, and pecans. Spread the mixture on a large plate.
  5. Roll the cheese ball in the coating mixture, pressing gently to ensure even coverage on all sides.
  6. Wrap the coated cheese ball tightly in plastic wrap and refrigerate for at least 1 hour before serving, or up to 5 days.
  7. Remove from the fridge 20–30 minutes before serving to soften slightly. Unwrap, place on a platter with crackers, and enjoy!
