Creamy Roasted Tomato Gnocchi (Vegan & Easy to Make)

This super easy roasted tomato & coconut gnocchi skillet is vegan, flavorful, and made with simple ingredients. Roasted tomatoes, garlic, and shallots create a rich base, finished with coconut cream and fresh basil for the perfect weeknight dinner.

Ingredients
  

  • 18 oz grape and/or cherry tomatoes, stems removed
  • 2 medium shallots, thinly sliced
  • 10 cloves garlic, peeled
  • 3/4 tsp coarse sea salt (adjust to taste)
  • 1/4 tsp black pepper, to taste
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp fresh ginger root, grated
  • 1 1/2 tsp coconut sugar or light brown sugar
  • 4 sprigs fresh thyme, stems removed
  • 3 tbsp extra virgin olive oil
  • 18 oz fresh potato gnocchi, vegan (egg- and dairy-free)
  • 1 small lemon, juiced (about 1–2 tbsp)
  • 1 cup fresh basil leaves, loosely packed
  • 5 tbsp full-fat coconut cream
  • 1 pinch chili flakes or extra cracked pepper (optional garnish)

Method
 

  1. Preheat the oven to 375ºF (190ºC). Prepare tomatoes, garlic, shallots, ginger, and thyme.
  2. Add tomatoes, shallots, garlic, salt, pepper, paprika, cayenne, coconut sugar, ginger, thyme, and olive oil to a cast iron skillet or oven-proof dish. Mix well.
  3. Roast in the oven for 35 minutes until tomatoes are softened and caramelized.
  4. Meanwhile, cook gnocchi in salted boiling water for 2–3 minutes until they float. Drain and set aside.
  5. Remove skillet from oven and add gnocchi, coconut cream, lemon juice, and basil. Stir gently to combine.
  6. Top with chili flakes or more cracked pepper if desired. Serve immediately.
