These crispy jalapeño popper bites pack all the bold, creamy, smoky flavors of classic poppers into buttery phyllo shells. Made with cream cheese, sharp cheddar, bacon, and fresh jalapeños, they bake up golden and irresistible in just 20 minutes.

Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, freshly grated
  • 1/2 cup bacon, cooked and crumbled
  • 2-3 fresh jalapeños, finely diced (seeds removed for less heat)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • kosher salt, to taste
  • black pepper, to taste
  • 30 mini phyllo shells (2 packages)

Method
 

  1. Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, mix softened cream cheese, shredded cheddar, garlic powder, and onion powder until smooth.
  3. Fold in crumbled bacon and diced jalapeños. Season lightly with salt and black pepper. Taste and adjust seasoning if needed.
  4. Arrange phyllo shells on the baking sheet. Spoon about 1 tablespoon of filling into each shell, slightly mounding the tops.
  5. Bake for 8–10 minutes, until shells are golden and the filling is hot and bubbly.
  6. Let cool for 2–3 minutes before serving. Garnish with green onions, extra bacon, or a drizzle of hot honey if desired.

Notes

For the crispiest shells, fill and bake immediately. Avoid microwaving leftovers to preserve the flaky texture.
