Ingredients

  • 2 English cucumbers, thinly sliced, peeled and deseeded if desired
  • 1 teaspoon salt, plus more to taste
  • 1/2 cup sour cream
  • 3 tablespoons everything bagel seasoning
  • 2 teaspoons white vinegar
  • 1/2 teaspoon black pepper, plus more to taste
  • 1/2 cup thinly sliced red onion

Equipment

  • colander for draining cucumbers
  • Large bowl for mixing salad
  • small bowl for dressing
  • Whisk
  • Paper towels or hands for pressing cucumbers dry

Method

  1. Toss cucumbers with salt in a colander set over the sink or bowl. Let rest 30 minutes to 1 hour.
  2. Rinse cucumbers, then press to remove excess moisture or pat dry with paper towels.
  3. In a bowl, whisk sour cream, everything bagel seasoning, vinegar, and black pepper to make the dressing.
  4. Combine cucumbers, dressing, and red onion. Add more salt and pepper to taste. Chill 30 minutes or serve immediately.

Notes

Refrigerate leftovers in an airtight container for up to 5 days. Not freezer-friendly due to sour cream. Peel and deseed cucumbers if preferred for a softer texture. Best served chilled to let flavors meld.
