These easy Cucumber Roll Ups are a refreshing and healthy appetizer. Thinly sliced cucumbers are spread with a creamy buffalo chicken filling, rolled up, and topped with fresh dill and chives. Light, flavorful, and perfect for parties or healthy snacking!

Ingredients
  

  • 1 large cucumber
  • ½ cup cooked and shredded chicken
  • ¼ cup buffalo sauce
  • ¼ cup mayonnaise
  • ¼ cup diced celery
  • ¼ cup diced red onion
  • Salt and pepper, to taste
  • Fresh chives and dill, for garnish

  • Sharp knife
  • Vegetable peeler or mandoline slicer
  • small bowl

Method
 

  1. Peel the cucumber and slice it lengthwise using a vegetable peeler or mandoline to create thin strips (about 6 or 7).
  2. Pat the cucumber strips dry. Spread with a thin layer of mayonnaise, then diagonally place shredded chicken, buffalo sauce, celery, red onion, salt, and pepper.
  3. Drizzle extra buffalo sauce over the filling if desired. Roll the cucumber strip tightly around the filling to form a roll.
  4. Secure rolls with a toothpick if necessary. Cut each into 6–7 smaller rolls depending on your preference.
  5. Arrange on a serving plate and garnish with chopped chives and dill. Serve immediately and enjoy!

Notes

The number of roll ups will depend on the size of the cucumber. This recipe can easily be doubled. Store leftovers in an airtight container in the refrigerator for best freshness.
