Cucumber Salad

This refreshing cucumber salad combines crisp cucumbers, tangy red onion, and fresh dill with a sweet and tangy vinegar dressing. Perfect as a cooling BBQ or picnic side dish.

Ingredients
  

  • 2 English cucumbers, very thinly sliced
  • 1/2 large red onion, very thinly sliced
  • 1/4 cup white wine vinegar
  • 1 tbsp honey or agave nectar
  • 1 tsp sea salt
  • 2 tbsp chopped fresh dill
  • chopped fresh chives, optional, for garnish
  • freshly ground black pepper, to taste

Equipment

  • Large mixing bowl
  • Sharp knife

Method
 

  1. In a large bowl, toss together cucumber, onion, vinegar, honey, and salt. Chill for 20 minutes.
  2. Transfer to a serving bowl, leaving excess water behind. Sprinkle with dill and chives if desired. Season with black pepper and serve.

Notes

Chill the salad for at least 20 minutes before serving to let the flavors meld. Add fresh chives for an extra layer of flavor and garnish. Best served fresh but can be stored in the refrigerator for up to 2 days (drain any excess liquid before serving).
