Cucumbers and Onions in Vinegar

Old fashioned cucumbers and onions in vinegar is a classic refrigerator pickle-style salad. It’s tangy, refreshing, and perfect as a summer side dish for BBQs, potlucks, and family dinners.

Ingredients
  

  • 1/3 cup distilled white vinegar or white wine vinegar
  • 1/4 cup very warm water
  • 1 teaspoon sugar (optional)
  • 1 teaspoon table salt (or kosher salt)
  • 2 large cucumbers (or 1 large English cucumber, about 2 cups sliced)
  • 1/2 cup sweet onion slivers (half of a small onion)
  • freshly ground black pepper (optional)

Equipment

  • Handheld mandolin for thin slicing cucumbers
  • Medium bowl for vinegar mixture
  • Whisk
  • Slotted spoon for serving

Method
 

  1. Whisk together vinegar, warm water, sugar, and salt in a medium bowl.
  2. Peel cucumbers if desired. If large, remove seeds. Slice into 1/8–1/4 inch rounds.
  3. Add cucumbers and onion slivers to vinegar mixture. Stir gently to coat.
  4. Cover and refrigerate for at least 2 hours to marinate. Serve with a slotted spoon. Sprinkle with black pepper if desired.

Notes

For best flavor, marinate at least 2 hours. Use warm water to help dissolve salt and sugar. Optionally seed cucumbers if large. Try variations like creamy cucumber salad with yogurt and dill, or swap in red onion or apple cider vinegar for more flavor.
