  • 0.5 cup heavy whipping cream (118ml)
  • 2 tbsp real maple syrup
  • 1 tbsp vanilla extract
  • 0.75 tsp ground cinnamon
  • 0.125 tsp ground cardamom
  • 0.125 tsp fresh grated nutmeg
  • 0.25 tsp fine sea salt
  • 2 tbsp butter, plus more for greasing dish
  • 1 tbsp granulated sugar (for topping)
  • 0.5 tsp ground cinnamon (for topping)

Equipment

  • 9×13 baking dish
  • Large mixing bowl
  • Whisk
  • Knife
  • Cutting Board

  • Oven

Method

  1. Grease a 9-inch by 13-inch baking dish with butter and set aside.
  2. Slice the bread into thick slices (1/2-inch to 1-inch), then cut each into two triangles. If fresh, dry the slices in the oven.
  3. In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, cinnamon, cardamom, nutmeg, and salt.
  4. Quickly dip each bread slice in custard and arrange in baking dish overlapping slightly.
  5. Pour remaining custard over the arranged bread slices.
  6. Cover with foil and refrigerate for at least 30 minutes or overnight.
  7. Preheat oven to 350°F (175°C).
  8. Bake covered for 30 minutes.
  9. Stir together 1 tbsp sugar and 1/2 tsp cinnamon for the topping.
  10. Melt 2 tbsp butter, uncover the French toast, and pour butter over slices.
  11. Sprinkle cinnamon sugar over the top, then bake uncovered until golden and puffed, about 10 minutes.
  12. Cool for 5 minutes, cut into 8 squares, and serve with your favorite toppings.

Notes

You can assemble this French toast the night before and bake in the morning. Try adding fruit like sliced apples or berries between the layers. Great served with maple syrup, whipped cream, or fresh fruit.
