Easy Creamy Ricotta Dessert

Ingredients
  

Ricotta Base
  • 1 cup whole milk ricotta cheese drained if watery
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp lemon zest freshly grated
Toppings
  • 1/2 cup fresh berries such as strawberries, raspberries, or blueberries
  • 1 tbsp toasted nuts chopped (e.g. almonds, pistachios, walnuts)
  • fresh mint leaves for garnish (optional)
  • extra honey for drizzling (optional)

Method
 

  1. Drain ricotta using a cheesecloth-lined strainer for 30 minutes if it’s wet. This step helps ensure a creamy texture.
  2. Whip ricotta, honey, vanilla extract, and lemon zest together in a bowl using a hand mixer or whisk until light and fluffy.
  3. Cover and refrigerate the whipped ricotta mixture for at least 1 hour to let the flavors meld.
  4. Spoon into serving glasses or bowls. Top with berries, toasted nuts, a drizzle of honey, and mint leaves.

Notes

Add limoncello or amaretto for an adult twist. For a chocolate version, mix in cocoa powder or Nutella. Makes a great topping for toast or fruit, too!
