- Drain ricotta using a cheesecloth-lined strainer for 30 minutes if it’s wet. This step helps ensure a creamy texture.
- Whip ricotta, honey, vanilla extract, and lemon zest together in a bowl using a hand mixer or whisk until light and fluffy.
- Cover and refrigerate the whipped ricotta mixture for at least 1 hour to let the flavors meld.
- Spoon into serving glasses or bowls. Top with berries, toasted nuts, a drizzle of honey, and mint leaves.
Notes
Add limoncello or amaretto for an adult twist. For a chocolate version, mix in cocoa powder or Nutella. Makes a great topping for toast or fruit, too!
