Ingredients
  

  • 7 tbsp butter, softened
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/4 tsp red gel food coloring
  • 1 cup all-purpose flour
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • red sanding sugar, for rolling
  • 18 Hershey’s Kisses, unwrapped

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Cream together butter, brown sugar, and granulated sugar until smooth and pale.
  2. Add egg yolk, vanilla extract, and red food coloring. Mix until fully combined and evenly colored.
  3. Add flour, cocoa powder, baking powder, and salt. Mix on low speed just until combined. Do not overmix.
  4. Scoop dough into 18 equal portions. Roll into balls and coat completely in red sanding sugar.
  5. Place dough balls 2 inches apart on the baking sheet. Bake for 10 minutes until set but soft.
  6. Immediately press a Hershey’s Kiss into the center of each cookie. Let cool on the baking sheet for 10 minutes before transferring.

Notes

For best results, avoid overbaking and press the chocolate kisses into the cookies while they are still warm. Freezing the kisses briefly helps them hold their shape.
