Method
- Measure 9 cups of Rice Chex into a large mixing bowl and add ¾ cup of chopped pistachios.
- In a microwave-safe bowl, combine the white chocolate wafers and butter. Microwave in 30-second bursts, stirring in between, until smooth and melted.
- Slowly pour the melted white chocolate mixture over the cereal and pistachios, using a large spatula to gently fold everything together.
- In a large Ziploc bag, combine the powdered sugar and pistachio pudding mix. Add the chocolate-coated cereal and shake vigorously for 60 seconds.
- Pour the contents through a sieve to remove excess coating and spread the muddy buddies on a parchment-lined baking sheet to set. Let them rest for at least 20 minutes.
- While the mix is still slightly tacky, toss in the remaining chopped pistachios to ensure some remain visible on top. Let it set completely before serving or packaging.
