Ingredients
  

  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tbsp unsweetened cocoa powder
  • 0.25 tsp salt
  • 0.5 tsp green gel food coloring (or more to desired color)
  • 8 oz cream cheese, softened (block style)
  • 4 tbsp unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line an 8x8-inch or 9x9-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, whisk together sugar and melted butter until glossy. Add eggs and vanilla and whisk for 1 minute until pale and slightly frothy.
  3. Stir in green gel food coloring, adding gradually until a vibrant green color is achieved.
  4. In a separate bowl, whisk together flour, cocoa powder, and salt. Gently fold dry ingredients into the wet mixture just until combined.
  5. Pour batter into prepared pan and smooth the top. Bake for 20–25 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool completely.
  6. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until light and fluffy.
  7. Spread frosting evenly over cooled brownies. Chill briefly for clean slicing, then cut into squares and serve.

Notes

Use gel food coloring only for best color. Always frost brownies after they are completely cooled to keep the cream cheese frosting stable and thick.
