Ingredients

  • 1 box Mac and Cheese (plus ingredients listed on box: butter, milk)
  • 4 cups fresh baby spinach
  • 2 tablespoons water
  • 1 stick cheese stick (string cheese or mozzarella)
  • 4 black olives, sliced
  • Pinch salt and black pepper, to taste

Equipment

  • Large saucepan
  • Blender or Food Processor
  • Microwave-safe bowl or skillet
  • Sharp knife
  • Straw or small cutter

Method

  1. Cook macaroni according to package directions, then stir in the cheese packet, butter, and milk until creamy.
  2. Place spinach in a microwave-safe bowl with water. Heat for 2 minutes until wilted. Let cool slightly.
  3. Blend spinach with a splash of water until smooth. Stir into the mac and cheese until it turns green.
  4. Slice the cheese stick into rounds. Use a straw to cut a small hole in each slice. Insert an olive slice for a pupil.
  5. Scoop mac and cheese into bowls and top with the eyeballs before serving.

Notes

For brighter green, add more spinach puree. Use mozzarella string cheese for the most realistic eyeball effect. Add shredded chicken for extra protein, and serve in a Halloween cauldron dish for festive party vibes!
