Ingredients
  

  • 1 lb lean ground beef (95%)
  • 1/2 cup carrots, shredded and roughly chopped
  • 8 oz water chestnuts, sliced and roughly chopped
  • 2 tablespoons garlic, minced
  • 1 1/2 tablespoons chili paste
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons coconut aminos
  • 1 tablespoon Sriracha
  • 2 tablespoons gluten-free hoisin sauce
  • 2 green onions, diced
  • 1 head butter lettuce

Equipment

  • Large Skillet
  • Spatula for breaking up meat
  • Knife for chopping vegetables

Method
 

  1. Heat a large skillet over medium heat. Add garlic, carrots, and ground beef. Cook 7–8 minutes, breaking up meat, until fully cooked.
  2. Add chili paste, coconut aminos, Sriracha, hoisin sauce, rice vinegar, and water chestnuts. Stir to combine.
  3. Simmer for 5 minutes, then stir in diced green onions.
  4. Serve beef mixture in butter lettuce leaves and enjoy immediately.

Notes

Use lean ground beef for best flavor and texture. For a spicier version, add extra Sriracha or chili paste. Keep lettuce leaves separate until serving to prevent sogginess.
