Ingredients
  

  • 1 ½ pounds lean ground beef
  • 1 onion, chopped
  • 1 bell pepper, seeded and diced
  • 2 14-oz cans kidney beans, rinsed and drained
  • 1 8-oz can tomato sauce
  • 1 14-oz can diced tomatoes
  • 1 cup water or beef broth
  • 2 tsp chili powder
  • 1 tsp sea salt (plus more to taste)
  • ½ tsp ground black pepper

  • Dutch Oven or large soup pot

Method
 

  1. In a large pot or Dutch oven, cook onions in olive oil until soft.
  2. Add ground beef and cook over medium-high heat until no longer pink. Drain fat if needed.
  3. Stir in remaining ingredients. Heat until bubbling, then cover and simmer on low for 20–30 minutes or until ready to eat.

Notes

For extra flavor, use beef broth instead of water. To thicken, simmer uncovered until liquid reduces. Can also be transferred to a slow cooker and kept on low until ready to serve.
