Ingredients
  

  • 1 lb lean ground beef (90/10)
  • 2–3 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 1/3 cup water
  • to taste salt and pepper
  • 2 lb sweet potatoes, peeled and cubed
  • 4 tbsp olive oil or avocado oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp cinnamon
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • 2 cups cottage cheese (4% recommended)
  • to taste hot honey
  • 2 medium avocados, sliced (optional)
  • optional red pepper flakes

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potatoes with oil, salt, pepper, cinnamon, paprika, garlic powder, and parsley until evenly coated.
  3. Spread sweet potatoes in a single layer and roast for 25 minutes, flipping halfway, until tender and caramelized.
  4. While potatoes roast, cook ground beef in a large skillet over medium heat, breaking it up as it browns.
  5. Add taco seasoning, tomato paste, and water. Stir and simmer for 2–3 minutes until saucy. Season to taste.
  6. Assemble bowls with roasted sweet potatoes, seasoned beef, cottage cheese, avocado, and drizzle generously with hot honey.

Notes

For best results, keep the hot honey separate until serving and add avocado fresh to avoid browning.
