Ingredients
  

  • 1 bag Plain Microwave Popcorn
  • 3 cups Lucky Charms Cereal
  • 2 tbsp Unsalted European Butter
  • 2 cups Mini Marshmallows
  • 1 tsp Vanilla Extract
  • 1 cup Mint M&Ms
  • 1/4 cup St. Patrick's Day Sprinkles
  • Pink Gel Food Coloring to taste For coloring

Method
 

  1. Pop the microwave popcorn according to package instructions. Transfer the popped corn into a large mixing bowl and sift through it to remove unpopped kernels.
  2. Add the Lucky Charms cereal to the bowl of popcorn. Optionally, separate the marshmallows from the cereal and reserve for garnish at the end.
  3. In a medium saucepan, melt the butter over medium-low heat. Once the butter is bubbling, add the mini marshmallows and stir until fully melted and smooth.
  4. Pour the melted marshmallow mixture over the popcorn and cereal. Use a large silicone spatula to fold the mixture gently, ensuring even coverage without crushing the popcorn.
  5. Spread the coated popcorn onto a large baking sheet lined with parchment paper. While still tacky, sprinkle the mint M&Ms, reserved marshmallows, and St. Patrick's Day sprinkles over the top.
  6. Let the popcorn cool for 15-20 minutes at room temperature or place in the fridge to set faster. Once firm, break into clumps and transfer to a serving bowl or gift bags.
