Method
- Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
- Thread frozen tater tots onto skewers, using 4–6 tots per skewer. Do not thaw.
- Arrange skewers on the baking sheet with space between them. Bake for 20 minutes, flipping halfway, until golden and crispy.
- Remove pan from oven. Sprinkle shredded cheddar down the center of each skewer, followed by crumbled bacon.
- Return to oven for 2–3 minutes, just until the cheese is fully melted.
- Let rest for 2 minutes. Drizzle with sour cream, sprinkle with chives and smoked paprika, and serve with ranch dressing.
Notes
For maximum crispiness, keep the tater tots frozen until skewering and bake at high heat. Let the skewers rest for 2 minutes before garnishing so the cheese sets and toppings stay put.
