- In a skillet over medium-high heat, brown the breakfast sausage until fully cooked. Drain the grease thoroughly and set aside to cool slightly.
- Prepare the pancake mix according to the package directions by combining it with the water. Stir until smooth and combined.
- Fold in the cooked sausage, shredded cheddar cheese, and maple syrup until evenly distributed throughout the batter.
- Preheat your oven to 400°F (200°C). Grease a mini muffin pan and fill each cavity about ¾ full with the mixture. Bake for 12–15 minutes, or until golden brown.
- Remove the McGriddle Bites from the pan and let them cool slightly. Serve warm with extra maple syrup for dipping. Enjoy!
