  • 1.5 pounds Brussels sprouts trimmed and halved lengthwise
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • sea salt and freshly ground black pepper to taste
  • 1/2 lemon juiced

Instructions

  • Step 1: Preparation
    Preheat oven to 425°F (220°C). Trim and halve Brussels sprouts. In a mixing bowl, combine with olive oil, garlic, oregano, thyme, salt, and pepper. Toss well to coat evenly.
  • Step 2: Roasting
    Spread Brussels sprouts on a rimmed baking sheet, cut side down. Roast for 20–25 minutes, until crisp and golden brown on the edges and fork-tender in the center.
  • Step 3: Finishing Touch
    Remove from oven and immediately drizzle with fresh lemon juice. Serve hot.

Notes

To avoid soggy Brussels sprouts, do not overcrowd the baking sheet. For a festive twist, add dried cranberries and toasted pine nuts before serving.
