Ingredients
  

  • 1 cup rolled oats (old fashioned)
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup toasted shredded coconut
  • 1/4 cup ground flaxseed
  • 1/4 cup chocolate chips (mini preferred)
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds (optional)

Method
 

  1. In a large mixing bowl, combine oats, peanut butter, honey, toasted coconut, ground flaxseed, chocolate chips, vanilla extract, and chia seeds (if using). Stir until fully combined.
  2. Cover the bowl and refrigerate for 1–2 hours to allow the mixture to firm up.
  3. Scoop about 1 tablespoon of the mixture and roll into a 1-inch ball. Repeat until all mixture is used.

Notes

Chilling the mixture before rolling is essential for firm, easy-to-shape bites. If the mixture feels dry, add additional peanut butter or honey one tablespoon at a time. Wetting your hands slightly helps prevent sticking while rolling.
