One Pot Lemon Herb Chicken & Rice

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons butter
  • to taste salt and pepper
  • 2 teaspoons Italian seasoning
  • 1 cup uncooked white rice
  • 2 1/4 cups chicken broth (low sodium preferred)
  • 1 lemon, juiced
  • 1 teaspoon Italian seasoning (for rice)
  • optional fresh parsley or cilantro, for garnish
  • optional lemon wedges, for serving

Method
 

  1. Melt butter in a large skillet or pan over medium heat. Season chicken with salt, pepper, and Italian seasoning. Brown for 1–2 minutes per side (do not cook through). Remove chicken and set aside on a plate.
  2. Add rice, chicken broth, lemon juice, and remaining Italian seasoning to the same pan. Place the chicken breasts on top of the rice mixture, cover, and simmer over medium-low heat for 20–25 minutes, or until the liquid is absorbed and rice is tender.
  3. Garnish with fresh parsley or cilantro and serve with lemon wedges. Serve immediately.
