Ingredients
  

  • 3 sweet potatoes, washed, peeled, cubed
  • 1/4 cup honey
  • 1/4 cup olive oil or butter
  • 2 teaspoons cinnamon
  • 1 dash pumpkin pie spice or nutmeg
  • salt and pepper, to taste

  • Baking Sheet for roasting
  • Zip-top bag for coating potatoes with seasoning
  • Mixing bowl optional, for serving
  • Oven preheated to 375°F

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Add cubed sweet potatoes, olive oil, honey, and spices to a large zip-top bag. Seal and shake to coat evenly.
  3. Spread potatoes evenly on a baking sheet, ensuring they are coated well with seasoning.
  4. Bake for 30 minutes or until tender. Transfer to a serving bowl and drizzle with more olive oil if desired.

Notes

You can drizzle with extra olive oil before serving for shine. For a festive twist, top with optional meringue (see directions). Try swapping olive oil for butter for richer flavor.
