  • 14 oz chicken or turkey sausage, sliced into 1/2-inch pieces
  • 2 medium sweet potatoes, cut into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, minced

Method
 

  1. Preheat oven to 400°F. Lightly grease a large sheet pan and add sausage, sweet potatoes, and broccoli.
  2. In a medium skillet, melt butter over medium heat. Add garlic and sauté 1 minute until fragrant. Add honey, soy sauce, and vinegar, then bring to a simmer. Cook 3-5 minutes until slightly thickened.
  3. Drizzle sauce over sausage and vegetables, season with salt and pepper, and toss to coat. Spread into a single layer on the sheet pan.
  4. Roast at 400°F for 25-30 minutes, until sweet potatoes are tender and sausage is lightly browned.
  5. Top with fresh parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 6 days. For best flavor, reheat in the oven to maintain crispness. You can swap chicken or turkey sausage for pork sausage if preferred.
