Ingredients
  

  • 10 tbsp unsalted butter
  • 1 1/4 cups white sugar
  • 3/4 cup cocoa powder
  • 1/2 tsp kosher salt
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup flour
  • 1 package Oreo cookies (regular or double stuffed)
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 large egg
  • 1 1/4 tsp vanilla extract
  • 1 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup semi-sweet chocolate chips

Equipment

  • 9x9 baking pan for layering and baking
  • Stand mixer for cookie dough preparation
  • Metal saucepan for making brownie batter

Method
 

  1. For the brownie layer: Melt butter in a medium saucepan over medium heat. Stir in sugar and cocoa powder. Remove from heat and whisk in salt, vanilla, and eggs until smooth. Mix in flour until combined. Set aside.
  2. For the cookie dough layer: In a stand mixer, cream butter and sugars until light. Add egg and vanilla, mixing well. Add flour, salt, baking soda, and baking powder; mix until just combined. Fold in chocolate chips.
  3. Preheat oven to 350°F. Line a 9x9 baking pan with foil or parchment paper and spray with non-stick spray. Press cookie dough evenly into the bottom of the pan.
  4. Layer Oreos on top of the cookie dough in a single layer (no overlapping).
  5. Pour brownie batter evenly over the Oreos, spreading to cover completely.
  6. Bake for 35-40 minutes. Test with a knife: if clean, remove from oven. Let cool at least 1-2 hours before slicing into squares.

Notes

* For perfectly neat squares, allow brownies to cool for at least 1-2 hours before slicing.
* You can swap the homemade layers for box mixes for an easier version.
* Experiment with different Oreo flavors for fun variations.
* Always bake in a 9x9 non-stick pan for best results.
