This St. Patrick’s Day Leprechaun Popcorn—also known as Leprechaun Bait—is a festive sweet-and-salty snack made with fluffy popcorn coated in green candy melts, drizzled with white chocolate, and finished with mint M&Ms and holiday sprinkles. It’s a fast, no-bake treat perfect for parties, gifting, or movie nights.

Ingredients
  

  • 10 cups popped popcorn (air-popped or lightly buttered)
  • 1 cup green candy melts
  • 0.5 cup white candy melts or white chocolate chips
  • 1 tsp coconut oil or vegetable shortening (optional)
  • 1 cup green mint M&Ms
  • 2 tbsp St. Patrick’s Day sprinkles
  • 1 tbsp green sanding sugar (optional)

Method
 

  1. Pop the popcorn and transfer it to a large bowl. Carefully remove and discard all unpopped kernels.
  2. Place green candy melts in a microwave-safe bowl. Heat for 40 seconds, then stir. Continue heating in 20-second intervals until smooth. Stir in coconut oil if needed to thin.
  3. Drizzle melted green candy over the popcorn and gently toss until evenly coated. Spread onto a parchment-lined baking sheet and sprinkle with green sanding sugar if using.
  4. Melt white candy melts using the same microwave method. Drizzle over the green popcorn in a zig-zag pattern.
  5. Immediately top with St. Patrick’s Day sprinkles and mint M&Ms while the chocolate is still wet.
  6. Let popcorn cool and set completely, about 20 minutes at room temperature. Break apart clumps and serve.

Notes

For best crunch, remove all unpopped kernels before coating and store in an airtight container as soon as the candy sets.
