Ingredients
  

  • 8 oz Full-fat block cream cheese, softened
  • 1/2 cup Grated Parmesan cheese
  • 8 oz Fresh mozzarella, shredded or in pearls
  • 1 clove Garlic, minced
  • 1 tbsp Fresh basil, chopped
  • 2 cups Cherry or grape tomatoes, whole
  • 1 tbsp Extra-virgin olive oil
  • 1/2 tsp Kosher salt
  • 2 tbsp Balsamic glaze

Method
 

  1. Preheat your oven to 400°F (204°C). Lightly grease a 9-inch pie plate or shallow baking dish with olive oil.
  2. In a large mixing bowl, combine the softened cream cheese, grated parmesan, and minced garlic. Use a hand mixer or sturdy spatula to blend until smooth and airy.
  3. Stir in 1 tablespoon of chopped fresh basil to the cream cheese mixture for an aromatic lift.
  4. Spread the cream cheese mixture into an even layer at the bottom of the prepared baking dish. Top with the shredded or pearl mozzarella, covering the cream cheese base completely.
  5. Arrange the whole cherry tomatoes over the top of the cheese. Drizzle with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of kosher salt.
  6. Bake in the preheated oven for 15–20 minutes, or until the tomatoes are wrinkled and starting to burst, and the cheese is bubbling and golden brown.
  7. Remove the dip from the oven and let it sit for 5 minutes to allow the cheese to set. Drizzle with balsamic glaze and sprinkle with fresh basil ribbons. Serve immediately with toasted baguette slices or crackers.
