A spooky Halloween dinner idea! This comforting crockpot beef stew is slow-cooked with carrots, celery, tomato soup, and tapioca, then served ladled over creamy mashed potatoes—perfect for a festive meal.

Ingredients
  

  • 1 pound beef stew meat
  • 2 cups baby carrots
  • 2 ribs celery, sliced or diced
  • 2 tablespoons minced dried onion
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 2/3 cup water
  • 1 can (10.5 oz) Campbell’s tomato soup
  • 2 tablespoons minute tapioca (or 1/4 cup flour)
  • 1 1/2 to 1 3/4 pounds Russet potatoes, peeled
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper, to taste

Equipment

  • Slow Cooker for cooking beef stew
  • Mixing bowl for mashing potatoes
  • Tongs to remove potatoes
  • Potato masher for smooth mashed potatoes

Method
 

  1. Add beef, carrots, celery, onion, salt, pepper, water, tomato soup, and tapioca to slow cooker. Stir well. If using flour, toss beef in flour before adding.
  2. Place peeled potatoes on top of mixture in the slow cooker.
  3. Cover and cook on low for 5-7 hours, until beef and potatoes are tender.
  4. Remove potatoes with tongs and place in a mixing bowl. Mash, then stir in butter, milk, and salt and pepper to taste.
  5. Season beef mixture with salt and pepper to taste. Serve by placing mashed potatoes on plates and ladling beef stew mixture on top.

Notes

If you don’t have minute tapioca, coat the beef in 1/4 cup flour before adding to the slow cooker. Adjust seasoning with salt and pepper before serving. This recipe works great for Halloween but can also be enjoyed year-round as a hearty family meal.
