Ingredients
  

  • 4 cups water
  • 2 cups rolled oats
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1 pinch nutmeg
  • 3 sweet apples, peeled and chopped
  • 1/4 cup honey or maple syrup
  • 1/4 cup pecans, chopped

Method
 

  1. Add water to a medium pot and bring to a boil over medium-high heat. Stir in oats, salt, cinnamon, and nutmeg.
  2. Add apples to the pot. Reduce heat to medium-low and simmer for 10–12 minutes, stirring occasionally.
  3. Once apples are tender, stir in honey and pecans.
  4. Turn off heat, cover, and let oatmeal rest for 5 minutes before serving.

Notes

For a vegan option, swap honey with maple syrup. Use gluten-free oats if necessary. Any apple variety works—try Granny Smith for tartness or Honeycrisp for sweetness. For creamier oatmeal, stir in milk before serving. Store leftovers in an airtight container in the fridge for 4–6 days.
