- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, combine onion powder, garlic powder, egg, breadcrumbs, salt, and pepper. Stir until combined, then add ground beef and mix well.
- Form mixture into 12 evenly sized meatballs, about 2 tablespoons each. Set aside.
- Slice each bacon strip in half crosswise, then again lengthwise, making 4 strips per slice. Wrap two strips around each meatball in a criss-cross pattern and secure with a toothpick.
- Place bacon-wrapped meatballs on the parchment-lined baking sheet. Bake 40–45 minutes, until bacon is crisp and meatballs are cooked through.
- Meanwhile, mix BBQ sauce and grape jelly in a small bowl to make the glaze.
- Brush baked meatballs with the glaze and return to oven for 5–10 minutes until caramelized and sticky.
- Remove from oven and garnish with fresh parsley, if desired. Serve warm with toothpicks.
Notes
Use thick-cut bacon for the best texture and hold. Secure bacon with toothpicks to prevent shrinking. Line your baking sheet with parchment for easy cleanup. Double the recipe for larger gatherings and serve with extra BBQ–grape jelly dipping sauce on the side.
