  • Irresistible Flavor Combo: The perfect balance of sweet, spicy, and savory in one perfect bite.
  • The Ultimate Party Appetizer: A crowd-pleasing, easy-to-eat finger food that’s always a huge hit.
  • Easy to Make: A straightforward recipe that’s perfect for any skill level.
  • Make-Ahead Friendly: Can be assembled in advance, making party day prep a breeze.

Ingredients

For the Meatballs:

  • 1.5 lbs Lean Ground Beef (90/10)
  • 1/2 cup Panko Breadcrumbs
  • 1 Egg, lightly beaten
  • 1/2 Yellow Onion, finely grated
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 lb Standard-Cut Bacon, slices cut in half

For the Sweet & Spicy Glaze:

  • 1/2 cup Brown Sugar, packed
  • 1/4 cup Sriracha or your favorite chili garlic sauce
  • 2 tablespoons Soy Sauce

Step-by-Step Instructions

  1. Prep: Preheat your oven to 400°F (200°C). Place a wire rack inside a large, foil-lined baking sheet.
  2. Make the Meatball Mixture: In a large bowl, gently combine the ground beef, panko breadcrumbs, egg, grated onion, minced garlic, salt, and pepper. Be careful not to overmix.
  3. Shape and Wrap: Roll the mixture into 1.5-inch meatballs. Wrap each meatball with a half-slice of bacon and secure it with a toothpick.
  4. Arrange and Bake: Place the bacon-wrapped meatballs on the prepared wire rack. Bake for 20 minutes.
  5. Make the Glaze: While the meatballs are in their initial bake, whisk together the brown sugar, sriracha, and soy sauce in a small bowl until the sugar is mostly dissolved.
  6. Glaze and Finish: After 20 minutes, remove the meatballs from the oven. Brush the glaze generously over all sides of each meatball. Return the pan to the oven and bake for another 10-15 minutes, or until the glaze is bubbly and caramelized and the bacon is crispy.
  7. Serve: Let the meatballs rest for a few minutes before serving. Garnish with sliced green onions if desired.

Tips & Variations

  • Pro Tip: Using a wire rack is the key to getting the bacon crispy on all sides, as it allows the fat to drip away and the hot air to circulate.
  • Control the Heat: The spice level can be easily adjusted. Use less sriracha for a milder glaze or more for an extra spicy kick.
  • Add Pineapple: For a tropical twist, place a small chunk of pineapple on the meatball before wrapping it with bacon.
  • Different Meat: Ground pork or a mix of beef and pork also makes for incredibly juicy meatballs.

Frequently Asked Questions (FAQ)

  • Can I make these ahead of time?
    • Yes! You can assemble the meatballs (wrap them in bacon and secure with toothpicks) up to 24 hours in advance. Store them in an airtight container in the refrigerator, then bake and glaze as directed.
  • How do I store and reheat leftovers?
    • Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat them in an oven or air fryer at 375°F for 5-10 minutes to help the bacon crisp up again.
  • Can I use thick-cut bacon?
    • Standard-cut bacon is recommended as it crisps up more easily in the time it takes to cook the meatball through. If you use thick-cut, you may need to increase the initial baking time.

Serving Suggestions

  • These bacon-wrapped meatballs are the perfect party appetizer. Serve them hot, straight from the oven, with the toothpicks still in for easy grabbing. They are fantastic on their own or with a side of creamy ranch or blue cheese dressing to cool down the spice.

Ingredients Equipment Method Notes

Ingredients

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 large egg, lightly beaten
  • 0.25 cup plain panko breadcrumbs
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 lb lean ground beef
  • 6 slices thick-cut bacon, cut into quarters
  • 2 tbsp BBQ sauce
  • 2 tbsp grape jelly
  • fresh chopped parsley, for garnish (optional)

Equipment

  • Baking Sheet
  • Parchment Paper
  • Mixing bowl
  • small bowl (for glaze)
  • Toothpicks to secure bacon
  • Basting brush for BBQ glaze

Method

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, combine onion powder, garlic powder, egg, breadcrumbs, salt, and pepper. Stir until combined, then add ground beef and mix well.
  3. Form mixture into 12 evenly sized meatballs, about 2 tablespoons each. Set aside.
  4. Slice each bacon strip in half crosswise, then again lengthwise, making 4 strips per slice. Wrap two strips around each meatball in a criss-cross pattern and secure with a toothpick.
  5. Place bacon-wrapped meatballs on the parchment-lined baking sheet. Bake 40–45 minutes, until bacon is crisp and meatballs are cooked through.
  6. Meanwhile, mix BBQ sauce and grape jelly in a small bowl to make the glaze.
  7. Brush baked meatballs with the glaze and return to oven for 5–10 minutes until caramelized and sticky.
  8. Remove from oven and garnish with fresh parsley, if desired. Serve warm with toothpicks.

Notes

Use thick-cut bacon for the best texture and hold. Secure bacon with toothpicks to prevent shrinking. Line your baking sheet with parchment for easy cleanup. Double the recipe for larger gatherings and serve with extra BBQ–grape jelly dipping sauce on the side.
