Ingredients

  • 1.5 lbs Boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb Yukon Gold or red potatoes, diced
  • 3 tablespoons Olive oil, divided
  • 3 cloves Garlic, minced
  • 1/2 cup White parts of green onions, chopped
  • 3/4 cup BBQ sauce, high-quality smokehouse style
  • 1 cup Sharp cheddar cheese, shredded
  • 1/4 cup Green parts of green onions, sliced
  • 2 tablespoons Fresh cilantro, chopped
  • to taste Salt, pepper, smoked paprika

Method

  1. Pat chicken bites dry. Season with salt, pepper, and smoked paprika. Heat 2 tbsp olive oil in a skillet over medium-high heat. Sear chicken 3-4 minutes per side until browned. Remove and cover with foil.
  2. Add diced potatoes to the same skillet with 1 tbsp oil if needed. Sauté 10-12 minutes, tossing occasionally until 80% cooked and golden on the outside.
  3. Push potatoes aside. Add minced garlic and white onion parts, cooking 45 seconds until fragrant.
  4. Return chicken and any juices to skillet. Pour BBQ sauce over everything. Toss over medium heat 2-3 minutes until sauce bubbles and reduces slightly.
  5. Sprinkle shredded cheddar over the top. Cover skillet and melt cheese 1-2 minutes over low heat.
  6. Garnish with sliced green onions and chopped cilantro. Serve immediately straight from the skillet.

Notes

Perfect for a 30-minute weeknight meal, high-protein family dinner, or low-cleanup gourmet option. Leverages Maillard reaction and potato par-fry technique for crispy potatoes.
