Ingredients
  

  • 8 oz Sharp or Extra-Sharp Cheddar Cheese, finely shredded
  • 1 cup All-Purpose Flour
  • 4 tbsp Cold Unsalted Butter, cut into 1/2-inch cubes
  • ½ tsp Salt
  • ¼ tsp Paprika
  • 3-4 tbsp Ice Cold Water
  • 1 tbsp Coarse sea salt for sprinkling

Method
 

  1. In a food processor, combine the shredded cheddar cheese, flour, salt, and paprika. Pulse a few times to combine.
  2. Add cold butter cubes to the food processor and pulse until the mixture resembles coarse crumbs.
  3. With the processor running, slowly drizzle in 3 tablespoons of ice cold water until the dough just starts to come together. Add the remaining tablespoon of water if the dough is too dry.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.
  5. Preheat your oven to 375°F (190°C). On a floured surface, roll the chilled dough out to about 1/16-inch thick. Cut the dough into 1-inch squares using a pizza cutter or fluted pastry wheel.
  6. Poke a small hole in the center of each square using a skewer or chopstick. Transfer the crackers to a parchment-lined baking sheet and sprinkle with coarse sea salt.
  7. Bake for 12-15 minutes, or until the edges are golden brown and the crackers are crisp. Let them cool completely on the baking sheet.
