Grilled California Avocado Chicken

Succulent honey-lime marinated chicken breasts grilled to perfection and topped with a fresh California-style avocado, tomato, and red onion salsa.

Ingredients
  

  • 1.5 lbs Boneless skinless chicken breasts, pounded to 1/2-inch thickness
  • 3 tablespoons Extra-virgin olive oil, divided
  • 3 tablespoons Raw honey, divided
  • 3 tablespoons Fresh lime juice, divided
  • 1 tablespoon Lime zest, divided
  • 2 cloves Garlic, minced
  • 1/4 teaspoon Dried oregano
  • 2 Hass avocados, diced
  • 1 cup Roma or grape tomatoes, diced
  • 1/4 cup Red onion, diced
  • 1/4 cup Fresh cilantro, chopped
  • to taste Salt and pepper
  • 2 Lime wedges, for garnish

Method
 

  1. Place chicken breasts between plastic wrap and pound to 1/2-inch thickness.
  2. Whisk olive oil, honey, lime juice, lime zest, garlic, and oregano. Reserve 2 tbsp for salsa. Marinate chicken 30 min–2 hrs in remaining mixture.
  3. Dice avocados, tomatoes, and red onion. Toss with reserved marinade and cilantro. Cover with plastic wrap directly on surface.
  4. Preheat grill to medium-high (approx. 400°F). Grill chicken 5–6 min per side until internal temp 165°F.
  5. Transfer chicken to platter, cover loosely with foil, rest 5 min.
  6. Plate chicken, top with avocado salsa, garnish with lime wedges and cilantro.
