  • The Sauce Balance: We use coconut milk as the liquid base. This keeps the sauce luscious and pourable, preventing the peanut butter from seizing up into a gluey mess.
  • Chicken Thighs: We use boneless, skinless chicken thighs instead of breasts. Thighs stay juicy and tender even when simmered in the sauce, whereas breasts can easily dry out.
  • Fresh Finish: We finish the dish with fresh basil and lime juice. These bright, herbal notes cut through the richness of the peanut butter, waking up the entire dish.

Ingredients Notes

  • Peanut Butter: Use a standard creamy peanut butter (like Jif or Skippy) for the smoothest texture. Natural peanut butters (the kind you have to stir) can separate when heated, leading to an oily sauce. If you use natural, you may need to whisk in a little extra warm water.
  • Coconut Milk: Use full-fat canned coconut milk for the richest sauce. “Lite” coconut milk will work, but the sauce will be thinner.
  • Soy Sauce: Use low-sodium soy sauce so you can control the saltiness. If you are gluten-free, swap this for Tamari or Coconut Aminos.
  • Fish Sauce: Do not skip this! It smells pungent in the bottle, but in the sauce, it provides that essential savory “umami” depth that makes Thai food taste authentic.
  • Chili Sauce: We use Sambal Oelek or Sriracha for a little kick. You can adjust the amount based on your spice tolerance.
  • Fresh Basil: Thai basil is traditional, but it can be hard to find. Regular sweet basil (Italian basil) works perfectly fine and adds a lovely peppery sweetness.

Step-by-Step Instructions

This is a one-pan meal, meaning cleanup is a breeze.

1. Prep the Chicken

Cut your chicken thighs into bite-sized 1-inch pieces.

  • Season: Toss the chicken pieces in a bowl with garlic powder, onion powder, ground ginger, and turmeric. This ensures the chicken is flavorful on its own, not just covered in sauce.

2. The Sear

Heat oil in a large skillet over medium-high heat.

  • Brown: Add the chicken in a single layer (do it in batches if needed). Sear until golden brown on the outside. It doesn’t need to be cooked through yet. Remove chicken and set aside.
  • Why? Searing locks in juices and creates “fond” (browned bits) on the bottom of the pan, which equals flavor.

3. Build the Sauce

In the same skillet (don’t wash it!), lower the heat to medium.

  • Whisk: Add the coconut milk, peanut butter, soy sauce, brown sugar, fish sauce, and chili sauce. Whisk constantly until the peanut butter melts and the sauce is smooth and bubbly.
  • Thicken: Let it simmer for 2-3 minutes. It will start to thicken and turn a beautiful golden-brown color.

4. Simmer and Finish

Add the chicken back into the pan, along with any juices on the plate.

  • Simmer: Cook for 5-8 minutes, or until the chicken is cooked through and the sauce clings to the meat.
  • Garnish: Remove from heat. Stir in the fresh basil and lime juice immediately.

Serving Suggestions

You need a vessel to soak up that incredible sauce.

  • Rice: Jasmine rice or Basmati rice are the classic choices. The fluffy grains absorb the creamy sauce perfectly.
  • Noodles: Toss this chicken with rice noodles or even linguine for a peanut noodle stir-fry vibe.
  • Vegetables: Steamed broccoli, snap peas, or roasted red peppers make great sides. You can even toss them right into the skillet with the chicken to cook.

Variations

  • Vegetarian: Swap the chicken for firm tofu cubes or chickpeas. Use vegetable broth or water to thin the sauce if needed.
  • Crunchy: Garnish with chopped roasted peanuts for added texture.
  • Extra Veggies: Add diced red bell peppers or snow peas during the sauté step for a more complete one-bowl meal.

Storing and Reheating

  • Fridge: Store leftovers in an airtight container for up to 4 days.
  • Reheating: The sauce will thicken significantly in the fridge (thanks to the peanut butter). Add a splash of water or chicken broth before reheating in the microwave or on the stove to loosen it back up.
  • Freezing: This freezes well! Store in freezer-safe containers for up to 3 months. Thaw overnight in the fridge.

Method
 

  1. In a bowl, toss the chicken pieces with garlic powder, ground ginger, turmeric, onion powder, salt, and pepper until evenly coated.

  3. Reduce heat to medium. Add coconut milk, peanut butter, soy sauce, brown sugar, fish sauce, and chili garlic sauce to the skillet. Whisk until smooth and combined, then bring to a gentle simmer.
  4. Return the chicken and any juices to the skillet. Simmer for 5–8 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  5. Remove from heat. Stir in the fresh basil and lime juice. Taste and adjust seasoning as needed.
  6. Serve hot over jasmine rice or noodles. Garnish with cilantro or chopped peanuts if desired.

Notes

Use creamy processed peanut butter for the smoothest sauce—natural peanut butter may separate unless whisked with extra water. Full-fat coconut milk gives the richest texture. Chicken thighs stay juicier than breasts. Add basil and lime at the end to brighten the dish.
